Organic Leafy Greens Recipe Ideas

You may have already noticed I really love my green leafy vegetables! I never used to eat much green besides broccoli until I made the organic switch. Including them every day has made a great change in my health and I can really notice the difference when I don’t eat enough greens.  As well as the incredible nutritional benefits they are also a great source of fibre, which many people are lacking yet needing in their diets. Here are some suggestions for how to enjoy different leafy greens. Remember if you are unable to identify a fruit. veggie or leafy green in your seasonal box or how to use it just drop me a line. Please keep your greens in an airtight container, wrapped in a tea towel or bag for longevity and freshness!
          Silverbeet, Rainbow Chard
  • My favourite sturdy leafy green. Chop leaves finely and use in place of spinach in any meal including soups, stir fry, green smoothies, salads and curries. 
  • Saute onions, then add finely chopped silverbeet or chard and garlic, stir occasionally until leaves are wilted. When using stems, add them to the pan first as they take slightly longer to soften.
  • If you don’t want to eat the stems, save them for juicing or smoothies.

    Bok Choy 
  • Enjoy in your morning smoothie! A great substitute to spinach in my favourite banana, date, cinnamon, spinach, coconut milk/water smoothie. Also a nice combo – banana, bok choy and ginger.
  • Place a small amount of boiled water in shallow pan. Water reduces the need for oil. is a quicker way to ‘steam’ greens and keeps them from drying out. Add chopped bok choy and broccoli. Stir occasionally. Once the greens soften add a good splash of tamari, pepper and sesame seeds. Our bok choy is so fresh and crunchy I often enjoy it raw in salads too.

    Kale - Purple, Green and Kavalo Nero (Black)
  • Raw: Destem and chop finely, squeeze lemon or lime, a pinch of salt and massage through to tenderize the leaves. If you chew your food well you can leave the stems on! Use as a salad base and add your favourite ingredients.
  • Cooked: Use as you would spinach in a stir fry or steamed and also in latter bok choy option above.
